Zero Cow Factory leverages yeast-based precision fermentation to produce non-GMO dairy proteins, specifically casein and whey. It uses A2 beta-casein protein, which is easier to digest and nutrient-dense. It aims to create a sustainable alternative to conventional dairy products like cheese, yogurt, and ice cream.
Why are they disruptive?
The precision fermentation technology eliminates the need for animal agriculture, delivering a sustainable, ethical, and environmentally sustainable solution. This process reduces land use by 99%, water consumption by 98%, and CO₂ emissions by 84% vs. traditional dairy farming.
